2 eggs
1 tsp. baking powder
1 ½ cups chopped nuts (125g), your choice, I used almond flakes.
1 tsp. vanilla
METHOD:
- Preheat the oven to 190 C. Line the trays with non-stick baking sheet.
- Cream butter and both sugars together in an electric mixer fitted with a paddle attachment.
- Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Cadbury bar and nuts.
- Roll into balls and place two inches apart on a cookie sheet. Press the dough lightly with the palm of your hand to flatten just a bit.
- Bake for 13 – 15 minutes.
- Cool completely before keep in the airtight container. They will get crunchier as they cool.
I tried the recipe today and I liked it because it is high fiber, crunchy and easy to bite through. I will cut down the white sugar by another 1/4 cup (50g) to suit my taste.

Hi, may i know what kind of chocolate chips do you use?
ReplyDeleteHi, Semi sweet Chocolate Sweet. These cookies were made for kids. You can cut down sugar if you think it is too much sugar.

hi, may I ask if I can substitute the oatmeal with all purpose flour?
ReplyDeleteHi, yes I guess should be fine. But, I have not tried with all ap flour.
