Guacamole Recipe

Let’s go Mexican! After having Guacamole at my farewell dinner, I fell in love with this sauce. I tried to search the recipes online and there are just so many I just wasn’t sure which one was good. This is the recipe I modified a little. It turned out just the way I wanted it.
Normally, Guacamole goes with Tortilla. So, I made some Tortilla too. However, it turns out that the Tortilla doesn’t keep very well and goes rather hard by the second day. I decided not to share the recipe, only the pictures.

Recipe - Guacamole
INGREDIENTS:
2 ripe avocados
1 small tomato (deseeded and diced)
¼ of medium red onion (finely minced)
½ capsicum (deseeded and diced)
Juice from ½ lime
1 cloves garlic (finely minced)
1/8 tsp cumin
1/8 tsp ground coriander
½ tsp salt
Dash of black pepper
METHOD:
- Cut avocados in half and scoop out avocado pulp into a mixing bowl and mash it with a fork.
- Add all tomato, red onion, capsicum and garlic to avocado.
- Squeeze in lime juice and add remaining ingredients to the bowl, mix well. Taste to see if you need more salt.
- Transfer into a bowl and wrap tightly with cling film. Refrigerate until ready to serve.
- Serve with Tortilla or chips.
