Mud Crab with Glass Noodles

My mother in law can’t resist it whenever she sees mud crabs at the market. She recently bought another 2 big crabs. Initially, she wanted to just cook the crab and remove the meat. The meat can be used for crab soup. I feel it is such a waste and decided to cook ginger crab with glass noodles. I used this Ginger Shrimp & Glass Noodles (Goong Ob Woonsen) recipe from Hot Thai Kitchen but substituted the shrimp with crab.
Eating crab at the restaurants is very expensive nowadays. It could cost more than RM100 per kilo. My mother in law got this crab less than half that price in the market. It does however take some effort to clean and cook crabs but if you like crabs it is well worth the effort.

Mud Crab with Glass Noodles Recipe
Serve: 3 – 4
INGREDIENTS:
200g glass noodles, soak in water for 10 minutes and drain
2 mud crabs (big), cut and clean
½ tsp black peppercorns
½ tsp white peppercorns
6 cloves garlic
15 slices ginger
8 cilantro stems or 4 cilantro roots
2 Tbsp vegetable oil
1 spring onion, cut 1 inch long or chinese celery leaves
Seasoning:
½ cup chicken stock
2 ½ tbsp soy sauce
1 tsp black soy sauce
2 tsp sugar
1 tsp sesame oil
METHOD:
- In a bowl, combine all the seasoning ingredients and stir until sugar is dissolved.
- Put the glass noodles into a wide bowl and pour the seasoning mixture over it and toss well. Set aside.
- Pound the peppercorns in a mortar and pestle. Add the garlic and smash until broken into pieces. Then add in cilantro roots and smash them to bruise.
- In a pot, add all the smashed herbs, ginger and oil. Heat the mixture over medium heat until the herbs are sizzling and fragrance.
- Add in the glass noodles together with the seasoning sauce then place the crab putting on top.
- Close the lid and cook over medium high heat until the sauce boiling. Then lower the heat to medium low and cook for 3 minutes.
- Open the lid and stir the glass noodles and crabs. Add some chicken stock if you think too dry. Cover the pot and cook for another 3 minutes. By now the noodles should be done. If the crabs still not fully cook, remove the noodles and continue cook the crabs for another few minutes or until cook. Off the heat. Throw in the spring onion and cover the pot. Let it sit for few minutes before serving.
- Transfer to a serving bowl or plate and serve while still hot. Enjoy!
