Steamed Tapioca with Coconut and Gula Melaka Creamer

I went to the market last weekend and came across these beautiful and fresh tapioca, I just couldn’t resist buying them.  At the same time, I bought some fresh coconut milk.  I immediately prepared this yummy dessert as soon as we got home.  Everything was so fresh it was delicious.

How To Make Steamed Tapioca with Coconut and Gula Melaka Creamer 


Yields: 6 - 7 servings

INGREDIENTS:

800g – 1000g tapioca, peeled and cut into half

Coconut & Gula Melaka Creamer:
250ml coconut milk
60g gula melaka (palm sugar)
1 tsp corn starch 
3 pandan leaves (screw pine leaves)
½ tsp salt

METHOD:
  1. Steam the tapioca in a prepared steamer for 30 minutes.
  2. In a saucepan, combine coconut milk, gula melaka, corn starch, salt and pandan leave. Bring to boil over low heat for few minutes. Turn off heat and set aside.
  3. Pour sauce over steamed tapioca. Serve warm or cold.
