Steamed Tapioca with Coconut and Gula Melaka Creamer

I went to the market last weekend and came across these beautiful and fresh tapioca, I just couldn’t resist buying them. At the same time, I bought some fresh coconut milk. I immediately prepared this yummy dessert as soon as we got home. Everything was so fresh it was delicious.

How To Make Steamed Tapioca with Coconut and Gula Melaka Creamer
Yields: 6 - 7 servings
INGREDIENTS:
800g – 1000g tapioca, peeled and cut into half
Coconut & Gula Melaka Creamer:
250ml coconut milk
60g gula melaka (palm sugar)
1 tsp corn starch
3 pandan leaves (screw pine leaves)
½ tsp salt
METHOD:
- Steam the tapioca in a prepared steamer for 30 minutes.
- In a saucepan, combine coconut milk, gula melaka, corn starch, salt and pandan leave. Bring to boil over low heat for few minutes. Turn off heat and set aside.
- Pour sauce over steamed tapioca. Serve warm or cold.
