My mother in-law loves dates and she bought quite a lot as this is the season when dates are in abundance.  At first she got some Deglet Noor dates which have firm flesh and are slightly dry.  Later she discovered Medjool dates which are sweet, moist and meaty textured, she loved them so much she bought a lot.  

Everyone started eating the Medjool dates and we ended up with left over Deglet Noor dates.  So as not to waste the dates, I used the Deglet Noor dates to make a Granola bar.  

This is healthy Granola Bar with no added sugar, using only the natural sweetness of dates, and with nuts, seeds and oats.  I love Granola Bar and I feel no guilty of eating a lot of them.

Recipe - Dates Granola Bars


Yields:  24 bars

INGREDIENTS:

100g rolled oats
120g almond flakes
100g sunflower seeds
100g walnuts
50g melon seeds
2 tbsp white sesame seeds, toasted
2 tbsp black sesame seeds, toasted
2 tbsp flaxseed, toasted
1/4 tsp salt

300g pitted dates (regular Deglet Noor), seeded 
40g coconut oil or olive oil

Utensil:  
9” X 9” square baking pan

METHOD:
  1. Toast almond flakes, sunflower seeds, melon seeds and walnuts in preheat oven at 180C (160C fan mode) for 8 -10 minutes, stirring occasionally.  Remove from oven and set aside to cool.
  2. While waiting for the seeds and nuts to cool, blend dates and coconut/olive oil in a powerful food processor until fine and become a paste.
  3. Line the bottom of baking pan with parchment paper.
  4. Once the nuts are cool enough to handle, place all dried ingredients in a mixing bowl and mixed well.
  5. Add the dates paste to the dried ingredients and mix with hand until all well combined. 
  6. Press the granola mixture into the prepared baking pan.
  7. Bake at preheated oven at 170C (150C fan mode) for 20 to 25 minutes.
  8. Remove from oven and let it cool.
  9. Once it is cooled, place in refrigerator for at least 1 hour to set before cutting.  Cut into your desire bar size with a very sharp, long and straight knife.  Store in an airtight container.

  1. Thanks for this great recipe, they are delicious, but I couldn't cut them so neatly, they tend to crumble a bit. Any tip on how to make them less crumbly and get those perfect cut edges? thank you

    1. Hi there, Thank you for trying this recipe and your comment. I am happy to hear that you like it. Please press it very hard and need to keep in the fridge first. Make sure your knife is sharped. It is advisable to use the long knife. I used watermelon knife.
