My sister gave me some of these “gems” sometime ago and I totally forgot about them till I found it while clearing the fridge. When dry it looks almost like amber. It is said that Peach Gum is good for treating urinary infections and relieving stress while also being good for our complexion as it is high in amino acids. When cooked, it turns into a clear golden jelly that is delicious.

How To Make Peach Gum Dessert 桃胶糖水

Yields:  7 servings

INGREDIENTS:

20g peach gum
40 gingko
20 red dates, seeded
2 tbsp goji berries
20g rock sugar or to taste
4 pandan leaves, tied into a knot
1.5 litters water

METHOD:
  1. Soak peach gum overnight. Clean the impurities if any and drain.
  2. In a pot, bring the 1.5 litters of water to boil.  Add in red dates, cover with lid, lower the heat and simmer for 10 minutes.  Then add in peach gum and continue to simmer for another 20 minutes.  
  3. Add in gingko, rock sugar and pandan leaves.  Continue to simmer for another 10 – 15 minutes.
  4. Off the fire and add in the goji berries.  Serve hot or chilled.
