Three Cups Mushroom (San Bei Ku) 三杯菇

This is something we had on our Taipei trip recently and it inspired me to try it at home. The mushroom is a perfect substitute for chicken and this dish is suitable for a vegetarian meal. It tastes so good we didn't miss the meat.

Three Cups Mushroom (San Bei Ku) 三杯菇 Recipe
INGREDIENTS:
300g king oyster mushroom, cut into your desired size
6 cloves garlic
2 inch ginger, sliced thinly
2 dried chillie
1 cup thai basil leaves
1 1/2 tbsp sesame oil
1 1/2 tbsp vegetable oil
Seasoning:
1 tbsp light soy sauce
2 tbsp chinese rice wine (I used shaoxing rice wine)
1 tsp brown sugar
METHOD:
- Combine all the seasoning in a small bowl and set aside.
- Heat up oil in a wok, saute the garlic and ginger till aromatic.
- Add in dried chillie and oyster mushroom. Add seasoning and stir fry till mushroom become soft.
- Add basil leaves, quick stir and dish out.
- Serve hot with steamed rice.
