Quinoa Salad with Broccoli

I have been making quinoa salad quite often recently.  It is easy to prepare and loaded with protein and fiber.

Recipe - Quinoa Salad with Broccoli



INGREDIENTS:

100g raw mixed quinoa
240ml/g water
1/4 tsp salt
1/8 tsp garlic powder
1/8 tsp onion powder

1 red capsicum, cut into your desired size
1 head broccoli, cut into bite sized pieces
250g cherry tomatoes, cut into half
Juice of quarter lemon (no need to use all)
2 tbsp extra virgin olive oil
Salt and pepper to taste

METHOD:
  1. Rinse quinoa under running tap water in a strainer.
  2. Put quinoa, water, salt, garlic powder and onion powder in a saucepan, mixed well.  Cover and bring to boil at medium heat.  Turn to low heat and simmer for 10 - 15 minutes or until liquid is dried and quinao is cooked. Loosen with spatula.  Set aside.
  3. Bring a pot of water to boil and branch broccoli.  Strain and keep aside.
  4. In a mixing bowl, add cherry tomatoes and sprinkle some salt and pepper.  Stir well.  Add in the rest of ingredients, capsicum, broccoli and cooked quinoa.  Season with salt, pepper, lemon juice and olive oil.
  5. Serve at room temperature.
