Moringa (Drumstick) Sambar

Once my mother in-law knew that moringa is very nutritious, she has been buying quite often. I have been trying to cook this moringa in different and this is a successful and delicious recipe that I tried.

Moringa (Drumstick) Sambar Recipe
Yields: 5 - 6 servings
INGREDIENTS:
4 moringa/drumstick, scraped
120g lentil, soaked in water for 1 hour (Please cut down to 80g if prefer not so thick)
6 cloves garlic, chopped or minced
2 big onion, chopped
3 tomato, chopped
4 spring coriander leaves
3 spring curry leaves
Salt to taste

2 tbsp coconut oil
1 – 1 1/2 cups water or more
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
1/4 tsp cumin seeds
1 tsp red chilli powder
1 tsp coriander powder
1 tsp turmeric powder
1/4 tsp garam masala powder
METHOD:
- Heat oil in a pan (I used cast iron pot) over medium heat. Add in mustard seeds, cumin seeds and fenugreek seeds. After few second, add in chopped garlic. Saute until aromatic and add in chopped onion.
- When the onion turn soft, add in chopped tomato. Stir well.
- Then add in all the herbs powder and stir well.
- Add in curry leave, lentils and water. Bring the sambar to boil, then turn to low heat and simmer until the lentils is almost cooked.
- Then add in moringa/drumstick and cook until both lentils and drumstick are cooked and soft.
