Banana Bread (Low Sugar)

This Banana Bread recipe is quite similar to the Banana Muffin I shared previously. I used the same method of preparation but I baked it in a loaf pan instead. The texture is so moist, soft and fluffy. My family really like it.
To be honest, I still don't understand why it is called Banana Bread. The texture is closer to a cake or muffin and it's not like regular bread at all.

Recipe: Banana Bread
Yields: 1 loaf
INGREDIENTS:
250g all-purposed flour
2 tsp baking powder or double action baking powder
1/2 tsp baking soda
1/2 tsp salt
90g fine brown sugar or caster sugar
240g - 250g overripe banana (about 4 big banana)
110g butter, melted
60g greek plain yogurt
2 large eggs (about 108g without shell)
1 tsp vanilla extract or paste
Utensil:
8” Loaf Pan (21.3cm X 11.2cm X 5.8cm)
METHOD:
- Preheat oven to 175C (top and bottom heat)
- Line loaf pan with parchment paper
- Sift flour, baking powder, baking soda together in a bowl. Stir in salt. Set aside.
- Melt butter in microwave. Set aside to cool.
- In a mixing bowl, mash the banana with folk or potato masher.
- Add in sugar, melted butter, yogurt, eggs and vanilla extract. Mix until incorporated.
- Fold in flour mixture and mix until everything is just combined
- Pour the batter into the loaf pan.
- Bake in a preheated oven for about 50 - 55 minutes or until a skewer inserted into the centre comes out clean.
- Remove from oven and let it cool for a few minutes before removing bread from the pan.
- Let the bread cool before slicing and serve.
