Homemade Soy Milk

I have been making my own soy milk occasionally since I got a Vitamix Blender a few years ago. I didn’t share as I didn’t strain the milk. I thought it is a waste just drink the milk and discard the paste but my hubby didn’t like to drink it unstrained. So lately, I have been straining the soy milk so my hubby will drink it too. I must admit it is a lot nicer after straining!

Recipe - Homemade Soy Milk
INGREDIENTS:
200g soybeans
1500ml water (for blending)
Gula melaka (palm sugar) to taste, chopped (optional)
4 pandan leaves, tied into a knot
Utensils:
Muslin bag
Powerful blender (I used Vitamix Blender)

METHOD:
- Wash and soak soybeans with enough water in a big bowl overnight.
- Rinse and drain the soybeans.
- Remove the skin as much as you can.
- Add half of the soybean and water in the blender container. Blend for 2 mins. Continue with the remaining of soybeans.
- Strain the mixture in a muslin bag and squeeze out the milk.
- Heat the soy milk in a big pot together with palm sugar and pandan leave over low medium heat for 10 to 15 minutes. Please stir frequently to prevent the bottom from burning.
- You may serve hot immediately or transfer to a jar after cooling.
- Store in the fridge for up to 5 days.
