How To Make Gluten Free Almond Flour Banana Cake
Yield: 1 cake
INGREDIENTS:
Dried Ingredients:
285g almond flour
1 1/2 tsp baking powder or double action baking powder
1/4 tsp salt
Wet Ingredients:
3 eggs (large size), room temperature
150g - 160g, banana (about 3 medium size banana)
15g raw honey or maple syrup (please add more if you like sweeter)
50g extra virgin coconut oil
1 tsp vanilla paste/extract
Topping:
Some almond flakes
Utensil:
6" X 6" Baking Pan
METHOD:
- Preparation:
- Preheat the oven to 180°C (using top and bottom heat).
- Line a baking pan with parchment paper.
- To Make The Batter:
- In a mixing bowl, mash the banana with folk or potato masher.
- In a mixing bowl, combine all the dry ingredients: almond flour, baking powder and salt.
- In another bowl, whisk the eggs with hand whisk then add in honey, coconut oil, and vanilla paste and mashed banana. Mix all together.
- Gradually add the almond mixture to the wet ingredients, mixing until well combined.
- Transfer the batter to the prepared baking pan and smooth the top. Sprinkle some almond flakes on top.
- To Bake:
- Place the cake pan on the second-lowest rack in the preheated oven. Bake at 180°C for about 45 minutes or until a skewer inserted into the center comes out clean.
- Remove the cake from the oven and let it cool for 10 minutes before taking it out of the pan.
